Note the Max TDP. You wouldn't want the i7-975 in a laptop due to the heat and low battery life. [Actually, you can get a laptop with this CPU -- http://www.malibal.com/boutique/pc/configurePrd.asp?idproduct=1 -- wonder what the battery life is...]

Though what you really want is to add some Intel Xeons to the mix
